I spent most of today holed up at El Centro Community College judging this year's version of the Rising Star Chefs competition. This is the 14th year that judges have chosen up-and-comers based on a dish they create to pair with a featured wine.
Cut to the chase. You want to know who won.
The white wine was Artesa Carneros Chardonnay 2008. The winners:
First place: Paul Peddle, executive sous chef, Fairmont Dallas, for his Pan Seared Halibut, Glazed Vegetables & Sweet & Sour Tomatoes, Lemon Caper Butter Sauce
Second place: Ji Kang, chef de cuisine, Dish-Dallas, for Pan-Seared Day Boat Scallops, Cauliflower Puree, Caramelized Cipollini Onions, Asian Pear Mostarda.
The red wine was Domaine Serene Evenstad Reserve Pinot Noir 2007. Winners:
First place: Andrew McDonald, rounds cook, Nobu Dallas, for Lamb with Rosemary Miso, Soy Glazed Carrots and Grilled Leeks
Second place: Guillaume Chun,executive chef, La Duni Northpark, for Braised Veal Osso Bucco on a Bed of Mashed Potatoes Surrounded by Wild Mushrooms.
Hungry yet? ALL these dishes will be on the menu April 28 at the awards dinner at the Nasher Sculpture Center. It's part of the Dallas Wine & Food Festival.
